Physicochemical properties of gelatin:

Gelatin is a high molecular weight polypeptide polymer obtained by partial hydrolysis of collagen contained in the skin, bones, and other tissues of animals.
Gelatin appears as nearly white or light yellow, almost odorless, tasteless, transparent or translucent solid flakes or powder granules. The molecular weight is 10,000~70,000, and the molecular weight of high-grade gelatin is within 100,000~150,000. The amino acid composition of gelatin is very special, with low methionine content, but high content of glycine, alanine, proline and hydroxyproline, accounting for 67% of the total amino acids, which is about 3 times the content of these four amino acids in other mammalian proteins.
Gelatin is insoluble in cold water, but it can absorb 5~10 times its weight of cold water and swell and soften, dissolving in hot water. Upon cooling, it forms a gel. The dissolving and solidifying temperatures are very close, approximately 30℃ for dissolving and 20~25℃ for solidifying.
Gelatin is prone to moisture absorption and deterioration in air, therefore it should be stored in a sealed and dry place. Avoid direct sunlight and high temperatures to prevent caking.
